Our Winery

The 2020 harvest was our first year of production. During this harvest we crushed and processed 21 tons of Arizona grapes. We crushed 34 tons in 2021 and have averaged 70 tons since then.

Tiffany Mencacci – Winemaker

Tiffany’s previous Winemaker position was at Haak Vineyards & Winery, Santa Fe, Texas for over 7 years.  In this role, she made many award-winning wines including 2 Best-in-Class winners and 1 Gold Medal winner at the 2024 San Francisco Chronicle Wine Competition.  Her other experience include positions on the winemaking & harvest teams at Sawtooth Winery in Nampa ID and J Vineyards and Winery in Healdsburg, CA.

Tiffany joined Cove Mesa in April 2024 as the Winemaker and relocated to Cornville, AZ from Texas.  She will continue in her role as Winemaker while relocating to Texas in mid-February 2026 to be closer to family. She will remain closely involved in all winery operations, working in coordination with Emil and Dillon to ensure continuity and excellence of the Cove Mesa brand. Tiffany will also be onsite during key winemaking activities, including Harvest and Bottling, maintaining her hands-on leadership throughout the process.

Dillon Guelich – Assistant Winemaker

On January 15, 2026, Emil and Cindy Molin, owners of Cove Mesa Vineyard, promoted Dillon Guelich to Cove Mesa Vineyard’s Assistant Winemaker. In this role, he will support Emil (Executive Winemaker) and Tiffany Mencacci (Winemaker) in all aspects of wine production. He will continue working part-time in our Tasting Room.
Dillon joined Cove Mesa Vineyard in May 2023 as a Tasting Room Server and quickly became a customer favorite. Known for his professionalism, genuine hospitality, wine knowledge and infectious enthusiasm, Dillon consistently creates meaningful and memorable experiences for every guest.
Dillon’s role in the Tasting Room sparked his passion for wine and set him on a path to deeper involvement in the craft. He has since developed a strong understanding of the entire winemaking process—from vineyard to bottle. Dillon completed the Yavapai College Viticulture program in Summer 2024 and is nearing completion of the Enology program, with just one course remaining, further demonstrating his commitment to the art and science of winemaking.

2024 Vintage

We started 2024 Crush on August 8. We crushed about 70 tons this year – Very exciting. So – what can you look forward to in the 2024 vintage:

  • Bonita Springs Vineyard – Trebbiano and Sauvignon Blanc
  • Carlson Creek Vineyard – Chardonnay, Riesling, Cabernet Sauvignon, Grenache and Syrah
  • Cove Mesa Vineyard – Assyrtiko (first harvest from Molin family estate vineyard)
  • Dos Padres Vineyard – Syrah and Barbera
  • Golden Rule Vineyards – Cabernet Sauvignon, Sangiovese, GSM Rose, Petite Verdot and Mourvèdre and Cabernet Franc
  • House Mountain Vineyard – Petite Sirah and Syrah
  • Pillsbury Vineyard – Chardonnay and Viognier
  • Rhumb Line Vineyard – Graciano, Grenache, Tempranillo, Vermentino and Picpoul
  • St Jude Vineyard – Malbec and Petite Sirah
  • Yavapai College Vineyard – Aglianico, Tempranillo, Sangiovese, Malvasia, Picpoul and Tannat
